CREAMY PEANUT STEW

20 MINUTES, SERVES 3

3/4 lb. chicken
1 large sweet potato (any color)
1 bell pepper (optional)
1 tbsp olive oil
1 jar peanut sauce (HAPI African Gourmet)

1. Boil a pot of water. Add sliced sweet potatoes (1/4 in thick) and cook until tender, 10 minutes.
2. While cooking potatoes, add olive oil to pot and heat. Add chicken and cook until brown on all sides.
3. Add sauce and simmer until chicken is cooked through, 5-10 minutes.
4. Chop pepper into 1/2-inch pieces, add to chicken and simmer for 1-2 minutes.
5. Drain sweet potatoes and add to sauce and chicken.

With rice, this makes a complete meal. 


RAMEN- INSPIRED SOUP

10 MINUTES, SERVES 2 (full meals)

3 oz ramen noodles
1 scallion
1 jar peanut sauce (HAPI African Gourmet)

Optional Additions
1 small cucumber, sliced
1/2 carrot, in sticks
2 oz shiitake mushrooms
1 piece nori (seaweed)
1 egg
chopped peanuts

1. Mushrooms can be sauteed over medium-high heat with a dash of soy sauce. Egg should be added to boiling water and cooked for 8 1/2 minutes.
2. Boil water for noodles, add, and cook for 3 minutes.
3. Add jar of peanut sauce plus 1/2 jar of water to a pot and heat over low (for a broth-like consistency, thin one-to-one).
4. Add cooked noodles to soup and serve with garnishes.


SPEEDY SHRIMP SKEWERS

10 MINUTES, SERVES 5

1 lb. shrimp
1 clove garlic
1 lemon
1 tbsp parsley
1 tbsp olive oil
1/3 jar peanut sauce (HAPI African Gourmet)

1. Slice garlic and cook in olive oil until light brown.
2. Slide shrimp onto wet wooden skewers and brush with garlic oil.
3. Cook shrimp on grill or under broiler for 3 minutes per side.
4. Mix shrimp with peanut sauce, lemon zest, and parsley.

Fresh bread will help finish any leftover sauce.


SIMPLE SWEET CORN

10 MINUTES, SERVES 6

6 ears sweet corn on cob
hot sauce
1/4 jar peanut sauce (HAPI African Gourmet)

1. Shuck and boil corn for 5 min or shuck and grill corn for 15-20 min, rotating every 5 minutes until kernels are browned.
2. Cover with peanut sauce and the hot sauce of your choice.

RADISH SALAD

20 MINUTES, SERVES 2

1 bunch pea microgreens
1 bunch radish microgreens
1/2 tsp pickling spices
6 radishes
1/2 cup rice vinegar
1/2 tsp sugar
2 eggs
1 tomato
1 ear corn on the cob
1/4 jar peanut sauce (HAPI African Gourmet)

1. Cut radish into matchsticks and add to jar with pickling spice, sugar, vinegar, and 1/2 cup water. This quick pickle can be done up to a day in advance.
2. Bring a pot of water (enough to just cover eggs) to a boil, add eggs, and boil for 8.5 minutes to get the perfect yolk.
3. Add corn to boiling water. Cook for 5 minutes, remove, and cut off kernels.
4. Combine tomatoes, radishes, eggs, corn, and your preferred greens. Pea microgreens are flavorful and radish microgreens are spicy. Dress liberally with peanut sauce.


FUSION CHICKEN SATAY

1 HOUR, SERVES 6

1 lb boneless skinless chicken breast
1 tsp curry powder
1/2 tsp turmeric powder
1/4 tsp cumin (optional)
1/4 tsp coriander (optional)
1 tbsp sugar
1 tsp kosher salt
1/4 cup coconut milk
1 clove garlic
2 stalks lemongrass
1/4 tsp ground pepper
1/4 jar peanut sauce (HAPI African Gourmet)

1. Mix all ingredients other than chicken and peanut sauce in a blender.
2. Cut chicken breasts crosswise 2 inches thick. Then slice along the thin axis into ¼-inch sections. Marinate for 1-12 hours.
3. Skewer chicken and grill or broil for 4 minutes on each side.
4. Dip skewers in HAPI African Gourmet’s Creamy Peanut Sauce.


MISO- PEANUT SOBA

10 MINUTES, SERVES 4

8 oz soba buckwheat noodles
1 head broccoli
1 carrot (optional)
1 tsp miso paste (optional)
1/2 jar peanut sauce (HAPI African Gourmet)

1. Boil a pot of water. Add soba noodles to unsalted water and cook for 8 minutes, then drain and rinse with cold water, first reserving 1 tablespoon of cooking water.
2. Boil a second pot of water and add broccoli to boiling water for 3 minutes. Move to cold water.
3. Mix reserved soba cooking water with miso paste to loosen.
4. Combine noodles, broccoli, miso, and peanut sauce with optional shaved carrot.
